Spicy and Tangy Schezwan Sauce Recipe

Prepare the peppers:

  1. Soak the 20 dried red chilies in boiling water for 30 minutes after rinsing them. De-seeding the chilies before soaking is advised for a somewhat less fiery flavour. If you like, you may also remove the stems.
  2. Next, drain all of the water from the soaked red chilies and, if necessary, remove the stems. Break them up and put them in a chutney or spice grinder, food processor, or blender to make chutney or spice.
  3. Blend in a tablespoon of water at a time, up to 2.5 tablespoons total, until smooth paste forms.
  4. Crush 3 to 4 Sichuan peppers finely in a mill and pestle. Remove from the equation. If you like a less spicy schezwan sauce, you may leave out the Sichuan.

Make Schezwan Sauce:

  1. In a medium-sized pan, heat 4 tablespoons of toasted sesame oil (or any other vegetable oil) over medium heat.
  2. Reduce the heat to medium-low and stir in 1 tablespoon finely minced garlic and 1 teaspoon finely chopped ginger.
  3. On low to medium-low heat, sauté for a few seconds until no longer raw. Keep an eye out for browning or burning, since this may result in a harsh flavour.
  4. Then, over moderate to medium-low heat, add 14 cup chopped shallots and sauté until translucent, stirring often. Remove the pan from the heat and add the ground red chilli paste.
  5. Mix everything up thoroughly.
  6. Finally, if using, add the crushed Sichuan pepper. 12 tablespoons finely chopped celery can be added at this point.
  7. Sauté the paste over moderate to medium-low heat for 1 to 2 minutes, or until the oil starts to leak out of the chilli paste. Add ½ cup of water and stir to loosen the paste into a sauce.
  8. Simmer the sauce on moderate to medium-low heat for about 2 minutes, stirring often.
  9. Combine all of the following ingredients in a mixing bowl. Mix and stir. Cook the sauce for another 5 to 6 minutes on low to medium-low heat.
  • 2 tablespoons raw sugar
  • as needed salt
  • ¼ to ½ teaspoons black pepper powder
  • a teaspoon of light soy sauce (½ teaspoon)
  • 1 tbsp. rice vinegar (or white vinegar, or apple cider vinegar).

 (TIP: Add 1 to 2 tablespoons of tomato ketchup to this step for a sweeter sauce.)

  1. Turn off the heat. Pour the schezwan sauce into a small jar or dish after it has reached room temperature. Refrigerate securely covered with a lid. If the sauce appears to be too thick, dilute it with a few tablespoons of boiling water.
  2. Use schezwan sauce as a spicy dipping sauce for your favourite snacks, or add it to dishes that call for it, such as ching’s schezwan sauce, fried rice, noodles, stir-fried vegetables, stir-fried tofu, and so on.
